Shaved Pear Salad

 

At the beginning of the year I made the decision to try and adopt a Vegan diet. Keyword: try. I never realized how much of what I was consuming had traces of animal products. Dairy, dairy, everywhere! People always ask if I’m doing it for animal’s rights and although I love animals that’s not the reason, sorry PETA. I simply feel better without it. With that said, avoiding it takes quite the effort and creativity in the kitchen but it’s getting easier as I practice and find new recipes. I recently discovered the “Petite Primavera and Shaved Pear Salad” from Thirteen Pies and it’s so delicious! I was eating it 2-3x a week, which is $45 for lunch, not even for the entire week, on a salad. In an effort to save money, because let’s be honest that’s ridiculous, I wanted to try and make the salad at home. It was so easy! Here are the ingredients (remixed):

I N G R E D I E N T S

 

  • Baby Arugula
  • Alfalfa Sprouts
  • Radish (thinly sliced)
  • Pear (julienne)
  • Walnuts (chopped)
  • S+P (sprinkle)
  • EVOO (drizzle)
  • Vinegar (drizzle) 
 

Mix and Match ingredients to your taste and use as much or as little as you like (except for the salt, go easy there). For the meat lovers out there you can add grilled chicken to beef it up.
