Veggie Lettuce Wraps
This super easy and quick recipe is one of my favorites! It's packed with healthy ingredients that don't leave you feeling starved after lunch. I got the idea from a salad my Mom's trainer makes that's delicious! Although I love the salad sometimes I want something a little different. Here are the ingredients:
- Boston lettuce (I like this kind for lettuce wraps because it's easier to roll without ripping and has a wider surface area of greens)
- Carrots, julienne (matchstick)
- Alfalfa Sprouts
- Dressing: 1tbsp balsamic vinegar + 1 tbsp dijon mustard, salt/pepper to taste
Thinly slice ingredients for easy rolling. Lay lettuce flat, after cleaning and patting dry, with ingredients in the center. You'll want to leave room at the top, sides and bottom so that when you roll everything doesn't spill out. Start at the left and fold towards the right like a burrito. You can secure with twine as pictured to keep secure until you eat if you're meal prepping or simply hold down to keep folded. Cut excess lettuce at open ends and enjoy! If you feel like this may not be enough to fill you up add shrimp or chicken for the meat-lovers out there.
