GARLIC FETTUCCINE + HOMEMADE TOMATO SAUCE

Ingredients:

  • 1 bag garlic fettuccine
  • 1 handful fresh cilantro
  • 1 handful fresh basil
  • 3 garlic cloves
  • 8 fresh tomatoes (roma or other)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 pan round of extra virgin olive oil
  • 1/2 cup red wine

Fettuccine: Follow the cooking directions provided, drain and set aside. I like to cook the fettuccine as the sauce is finishing so it doesn't sit too long and dry out.

The Sauce: Prepare to make the sauce by chopping tomatoes, garlic, basil and cilantro. Heat a saucepan over medium high heat, adding olive oil and wine. Once heated, add tomatoes, garlic, basil, cilantro, salt and pepper. Bring to a simmer, cover and cook until the sauce reaches the consistency of your choice, usually about 20 minutes.

Top the fettuccine with the sauce and enjoy!
