Another super simple recipe!
Wash and pat dry tomatoes and carrots. Slice tomatoes and carrots in whichever shape you like.
Heat cast iron skillet on medium heat.
Drizzle tomatoes and carrots with olive oil and sprinkle with salt.
Sautee until carrots are soft, usually 10-15 minutes depending on how thinly they are sliced.
Add other seasonings if you'd like!
Pair with texmati rice if you'd like more substance and enjoy!
