This is a great recipe if you want to try something new for breakfast on a relaxing Saturday or Sunday morning ! It's also quick and easy if you have holiday or visiting guests to cook breakfast for and don't want to be in the kitchen all morning!
- 1 egg
- 3-4 stalks asparagus
- herbs + salt + pepper to taste
Serving size: 1
Cook Time: 10 mins
Add EVOO to medium pan and sauté asparagus on medium heat until crispy, about 10 mins (less time if you prefer non-crispy).
Fry egg separately in small pan with EVOO + salt + pepper. I like my eggs with minimal to no run so I cook on both sides for about 2 mins each. Just eyeball it and cook to your liking!
Garnish with herbs for look + taste.
