If you haven't noticed yet...I'm all for a simple recipe. Don't get me wrong, I like all recipes, but the quick ones are so much easier during the work week. For this recipe I made enough salmon to make sandwiches for the entire week.
Salt + pepper salmon to taste.
I cooked the salmon by heating the pan to medium high heat with EVOO, searing for 5 minutes meat down (don't move once placed) and flipping over on the skin side for 2 minutes to finish. It gives the salmon a crispier taste.
I'm also a fan of baking salmon--you can pre-heat the oven to 350 and bake for 20 minutes.
Once the salmon is cooked, spread goat cheese on both sides of the bread, adding salmon, avocado and arugula in-between.
Enjoy and pretend you're in France with your french baguette--easy!
